Recipes from the reunion
I have to say, the food at the reunion all those months ago was fabulous. The best I've eaten in some time. I would really appreciate it if anyone/everyone who cooked would post their recipes so others (read "I") could cook those themselves.
I am checking it once in a while. The dish I made was very simple. Take cooked spaghetti, cooked chicken (anyway you like it. I marinated it in tequila lime.) Sundried tomatoes, fresh garlic, fresh parmesan cheese, and mix it all together. You can add bell peppers and fresh tomatoes too.
Okay - My recipe is also very easy - corn tortillas Enchilada sauce meat or shrimp or other fish cheese and onions sliced olives
Heat the enchilada sauce, dip the tortilla in, place it in slightly greased baking dish, add meat or fish and cheese, onion, olives - continue until the dish is filled, top with cheese and more sauce and bake until done.
Actually - there's more to that recipe. I pre-cook the meat or fish/shrimp and add spices to taste when I cook it. So, when you assemble the enchiladas, all you have to do is bring it to temperature....and enjoy. Terri
My roasted veggies are also easy -- olive oil with whatever spices you like roasted at 325 or put on the grill (potatoes, carrots and the like first, then, onions, peppers, then mushrooms, squash, etc.) I marinated the steak in a red wine (merlot/shiraz/pinot noir/cab?) and Worcestershire sauce after putting only ground pepper on it. I think I did the chicken with some Pinot Grigio (in honor of Ray) and spices with a little barbeque sauce p.s. I finally created a google blogger account so I can comment.
